I love tabouli

The weather is so humid and hot that you can’t cook inside the house, you can’t go out to fire up the BBQ either.

So, what do you do? You make tabouli!

Man, I love this dish, and I love how easy it is to make.

Here’s a 5 minute very basic tabouli made for today, for 2:

  • Couscous - 1 1/2 cup
  • Chickpeas – 1/2 tin
  • Tomatoes - 2
  • Lemon - 1
  • Mint
  • Parsley 
  • Salt – to taste
  • Pepper – to taste
  • Feta cheese (optional)

Boil water and pour over couscous (1 to 1), cover and let rise for 5 minutes.

Meanwhile mix all other ingredients: chop tomatoes, squeeze out the lemon, chop herbs (the more the better – I like to have a full cup of mint / parsley combined). Add everything together and mix. Prepare couscous in advance if you want a cold dish. Crumble feta cheese on top.

Tabouli tastes better the next day!
